1 squash (in my case a squash from my garden)
(I save the seeds and microwave or roast them)
2 leeks, chopped
1 bell pepper (tender thin skinned), chopped
1 Anaheim pepper, chopped
4 garlic cloves, chopped
Three figs.

Sauté the leeks in butter. After they start to brown add the chopped peppers. Continue to sauté over high heat. After five or so minutes turn the heat down to medium and add the garlic. Continue to sauté until the raw garlic smell is gone.
Add a little more butter the squash. Cover and cook at medium heat, stirring occasionally. Scoop out the red pulp of the figs and add it to the mixture. Use a spoon to cut up the squash even further as it cooks. Cover and keep cooking. Add a little salt. Stir occasionally. When the squash mixture is insanely wonderful it is ready to serve. The Anaheim peppers will give it a little heat. The squash and figs will make it sweet. This stuff is really good.
